Over this past weekend, I learned how to bake a classic Swedish pastry – kanelbullar (cinammon buns). These are not your grapefruit-sized, icing-coated calorie bombs called Cinnabons, but rather, a modestly sweet version that fills up your apartment with the spicy scent of raw cinnamon.
Starting with the basics – flour and yeast.
..and enough butter to make me feel ashamed for actually posting this picture of butter.
Then you flatten out the dough using any masculine brawn available…
The flattened dough is spread with a cinnamon-sugar mix that looks a little gross…
The filled dough is rolled up and cut into perfect slices….
…that look like this.
…while the casualties are pushed aside…
The buns, now looking recognizable, are coated with whisked raw eggs.
Next comes my favorite part; dousing the buns with pearl sugar crystals.
Move aside, powdered sugar! Pearls are where it’s at.
Now slide them in with care into the oven.
Note – I planned on inserting a photo of The Urb sitting on the floor patiently by the oven but alas, I can’t share it!
10 minutes and voila! Freshly baked, fluffy inside, slightly crispy outside kanelbullar.
…which can be consumed gluttonously with cold milk or coffee.

I have to say, we consumed 40 buns in 7 days. Yep! Eating it for breakfast, lunch, and dinner. Needless to say, I think I’m hitting the gym today 😉
